Jim Jam Cookies with Beku Mulberry Jam

INGREDIENTS

For the cookies:

  • 1 cup (225g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • ¼ tsp salt

For the filling:

METHOD

1)Prepare the dough:

In a large bowl, beat the butter and sugar together until light and fluffy.
Mix in the egg yolk and vanilla extract until well combined.
Gradually add the flour and salt, mixing until the dough comes together.

2)Shape the cookies:

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
Scoop out small portions of dough (about 1 tablespoon each) and roll them into smooth balls.
Place them on the baking sheet about 2 inches apart.
Make the indent:

Use your thumb or the back of a small spoon to create a small well in the center of each dough ball.
If the dough cracks, gently press it back together.

3)Fill with jam:

Spoon about ½ teaspoon of Beku Mulberry Jam

5)Bake:

Bake for 12-15 minutes, or until the edges are lightly golden.
Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
